Ingredients
Hemp-enriched pasta – 2 oz
Cherry tomatoes, halved – ½ cup
Kalamata or Castelvetrano olives, sliced – 2 tbsp
Buffalo mozzarella or fiordilatte, diced – 2 oz
Extra virgin olive oil – 1½ tbsp
Red wine vinegar – 1 tsp
Fresh basil or oregano, torn – 1 tbsp
Black pepper – to taste
Salt – minimal, to taste
Preparation
Cook pasta, then shock in cold water and drain thoroughly.
Toss pasta with olive oil and vinegar.
Fold in tomatoes, olives, and mozzarella gently.
Finish with herbs and black pepper.
Chill before service.
