Vegan Hemp Pasta with Lentil Ragù & Cherry Tomatoes

Ingredients

  • Hemp-enriched dry pasta – 2 oz

  • Cooked green or brown lentils – ½ cup

  • Cherry tomatoes, halved – ½ cup

  • Onion, small dice – 2 tbsp

  • Garlic, minced – 1 clove

  • Extra virgin olive oil – 1 tbsp

  • Tomato paste – 1 tbsp

  • Fresh thyme or oregano – ½ tsp

  • Red wine vinegar or lemon juice – 1 tsp

  • Black pepper – to taste

  • Salt – to taste

Preparation

  1. Sauté onion and garlic in olive oil until soft.

  2. Add tomato paste and cook briefly to caramelize.

  3. Stir in lentils, cherry tomatoes, herbs, and a splash of water.

  4. Simmer gently 8–10 minutes until saucy but not heavy.

  5. Toss cooked pasta with ragù; finish with acid and black pepper.
