Vegan Hemp Pasta with Lentil Ragù & Cherry Tomatoes

Ingredients
Hemp-enriched dry pasta – 2 oz
Cooked green or brown lentils – ½ cup
Cherry tomatoes, halved – ½ cup
Onion, small dice – 2 tbsp
Garlic, minced – 1 clove
Extra virgin olive oil – 1 tbsp
Tomato paste – 1 tbsp
Fresh thyme or oregano – ½ tsp
Red wine vinegar or lemon juice – 1 tsp
Black pepper – to taste
Salt – to taste
Preparation
Sauté onion and garlic in olive oil until soft.
Add tomato paste and cook briefly to caramelize.
Stir in lentils, cherry tomatoes, herbs, and a splash of water.
Simmer gently 8–10 minutes until saucy but not heavy.
Toss cooked pasta with ragù; finish with acid and black pepper.
