Vegetarian Hemp Pasta with Fresh Ricotta, Spinach & Walnuts

Serving Size: 2 oz dry pasta

Ingredients

  • Hemp-enriched dry pasta – 2 oz

  • Fresh spinach or turnip greens – 1 cup (lightly packed)

  • Fresh ricotta (sheep or buffalo preferred) – ¼ cup

  • Walnuts, lightly toasted & chopped – 1 tbsp

  • Extra virgin olive oil – 1 tbsp

  • Lemon zest – ½ tsp

  • Chili flakes – pinch

  • Black pepper – to taste

  • Salt – minimal, to taste

Preparation

  1. Cook pasta until al dente; reserve pasta water.

  2. Wilt greens briefly in a sauté pan with olive oil.

  3. Add pasta and a splash of pasta water; fold to combine.

  4. Remove from heat. Gently fold in ricotta to create a light, creamy coating.

  5. Finish with walnuts, lemon zest, chili flakes, and black pepper.
