Vegetarian Hemp Pasta with Fresh Ricotta, Spinach & Walnuts

Ingredients
Hemp-enriched dry pasta – 2 oz
Fresh spinach or turnip greens – 1 cup (lightly packed)
Fresh ricotta (sheep or buffalo preferred) – ¼ cup
Walnuts, lightly toasted & chopped – 1 tbsp
Extra virgin olive oil – 1 tbsp
Lemon zest – ½ tsp
Chili flakes – pinch
Black pepper – to taste
Salt – minimal, to taste
Preparation
Cook pasta until al dente; reserve pasta water.
Wilt greens briefly in a sauté pan with olive oil.
Add pasta and a splash of pasta water; fold to combine.
Remove from heat. Gently fold in ricotta to create a light, creamy coating.
Finish with walnuts, lemon zest, chili flakes, and black pepper.
